Roberto Tre Dinner Pizza RECIPE
Smoked Chicken, Chorizo Sausage,
Roasted Red Peppers
and Petite Tomme Cheese with
Basil Pesto Sauce.
The Toppings:
1) Marinate and smoke (or grill) a whole chicken breast,
then slice into bite sizes.
2) Brown a 1/4 pound of Chorizo sausage with olive oil and garlic cloves.
3) Drain 4 oz. of prepared roasted red peppers,
slice into 1/4" strips.
4) Finely shred 2 cups of Petite Tomme cheese.
The Dough:
1) Roll out and pan a 15 oz. ball of fresh pizza dough into a classic pizza pan.

The Sauce:
1) Prepare 1 1/2 cups of Basil Pesto Sauce. [Recipe]
Assembly:
1) Spread the Basil Pesto Sauce evenly over the dough.
2) Distribute the toppings, in the order of the above, (cheese last), on
top of the sauce.
3) Bake in a 400°F oven, middle rack for about 20 minutes.
Let set 5 minutes to cool,
slice and serve!
