Classic Tomato Pizza Sauce Recipe

This tomato sauce is lightly herbed with oregano and basil, yet the basic tomato taste is allowed to shine through. Some pizza aficionados prefer an even simpler sauce than this, but, you'll like the colors and bouquet this sauce adds to your own, home-made pizza. This recipe makes about 2 quarts.

Ingredients:

3 tbsp. - Butter
16 oz. - Tomato puree
3 tbsp. - Olive oil
1 tsp. - Salt
3 - Garlic cloves, minced
1/4 tsp. - Black pepper
3 - Yellow onions, large , minced
1 tsp. - Whole oregano
2 qts. - Whole Italian tomatoes, canned or fresh, peeled and cooked
1 tsp. - Whole basil


Preparation:

In a Dutch oven or large skillet, melt the butter with the olive oil and slowly but completely sauté the garlic and onion.

Add the tomatoes, salt, pepper, oregano, basil and puree. Bring to a boil, then simmer covered for two hours. Stir occasionally, crushing the tomatoes with a potato masher.

Continue to mash, stir, and simmer partially covered until the sauce reaches the consistency of a rich soup.

If you find you have too many or too large tomato seeds left in the sauce, you may run the sauce through a sieve, (strainer). Set the sauce aside to cool or refrigerate before applying it to your pizza dough.

New York-Style Pizza Sauce Recipe

Ingredients:

2 cans (14.5 oz.) - Roma or Furmano's Whole Peeled Tomatoes, or substitute your favorite
1 can (14.5 oz.) - Roma or Furmano's Pizza Sauce, or substitute your favorite
1/4 tsp. - Dried oregano, crushed
1/4 tsp. - Dried basil, crushed
1/4 tsp. - Dried marjoram, crushed
1/2 tsp. - California garlic salt
1/4 tsp. - Cayenne or black pepper


Preparation:

Combine all ingredients in a large pot, bring to a boil, then simmer for 1 hour. Let cool to room temperature. Refrigerate until ready to use.


Pennsylvania-Style Pizza Sauce Recipe

Ingredients:

1 can (12 oz.) - Tomato paste
11/2 cups  - Water

1 tsp. - Ground oregano
1/2 tsp. - Basil
1/4 tsp. -
Salt
1/4 tsp. -
Black pepper
1/4 tsp. -
Sugar
1/8 tsp. -
Garlic powder
1/8 tsp. -
Onion powder
1/8 tsp. -
MSG (monosodium glutamate), optional

Preparation:


Measure dry ingredients into a small container, mix together well, and set aside. In a medium sized saucepan, combine tomato paste with water over medium heat until it has a uniform consistency. When it begins to bubble, add pre-measured spices and reduce heat to medium-low.

Allow to simmer, uncovered, 35 to 40 minutes until it reaches desired thickness. Stir occasionally. Cover and cool to room temperature. Refrigerate in an airtight container until needed, (up to 4 weeks). Makes about 2 1/4 cups...enough for 3 - 12" pizzas.

Basil Pesto Pizza Sauce Topping

Ingredients:

12 - Walnuts, shelled
2 tbsp. - Pine nuts
1 tsp. - Coarse salt
4 - Black peppercorns
3 - Garlic cloves
4 tbsp. - Butter
3 cups - Basil leaves
4 oz. - Grated Parmesan cheese
4 oz. - Grated Romano cheese or Parmesan cheese
1 1/2 cups - Olive oil
 
Preparation:

Place all ingredients except 1 cup olive oil in food processor and grind very fine.
Add remaining olive oil and blend a few seconds until very smooth.

Aioli Pizza Sauce (Garlic Mayonnaise)

The flavors of this classic aioli go with just about anything: meat, fish or vegetables.
A small dollop dresses up the most ordinary dishes.

Makes about 11/2 cups

Ingredients:

2  - Garlic cloves, smashed to a paste with a mortar and pestle or finely minced
2 - Egg yolks, pasteurized, at room temperature
1 tsp. - Dijon mustard
1 cup - Extra-virgin olive oil, room temperature
2 tsp. - Fresh lemon juice

Preparation:


Procedure: Place garlic in a large bowl. Add yolks and mustard and begin to whip, using a wire whisk. As mixture begins to thicken, begin to add oil, a few drops at a time, continuously whisking. Once half the oil has been added, aioli should be thick and creamy. Add remainder of oil in a thin, steady stream. Finish with lemon juice, and season with salt and pepper.

Presentation: Serve immediately, or refrigerate for later use, no longer than 5 days.

Approximate nutritional analysis per 1-tablespoon serving: calo­ries, 130; fat, 14 grams; calories from fat, 99 percent; carbohy­drates, trace; protein, trace; fiber, trace; cholesterol, 20 milli­grams; sodium, 10 milligrams.

Aioli Lite Pizza Sauce (Lower-Fat)

There's no mistaking that this version tastes different from original aioli. Note that the consistency of this aioli is slightly thinner than a traditional version.

Ingredients:

1  - Garlic clove, smashed to a paste with a mortar and pestle or finely minced
7 oz. - Soft tofu, drained well
2 tbsp. - Hellmann's Light Mayonnaise or other reduced-fat Mayonnaise
1 tbsp. - Dijon mustard
1 tbsp. - Fresh lemon juice
2 tbsp. - Extra-virgin olive oil

Preparation:


Procedure: Combine all ingredients in food processor. Process the mixture until smooth. Season with salt and pepper.

Presentation: Serve immediately, or store in refrigerator, no longer than 5 days.
Makes about 11/2 cups

Approximate nutritional analysis per 1-tablespoon serving: calories, 30; fat, 3 grams; calories from fat, 84 percent; carbohydrates, trace; protein, 1 gram; fiber, trace; cholesterol, trace; sodium, 38 milligrams.

Ranch & Cream Cheese Pizza Sauce (Chilled)

Prepare this sauce, whipping these ingredients to a smooth texture the consistency of a cake icing:


Ingredients:

1 pack - Philadelphia Cream Cheese
1 env. - Hidden Valley Ranch Dressing Mix (Dry)
2/3 cup - Mayonnaise
2/3 cup - Sour cream
1 dash - Seasoning salt or cayenne pepper
1 tbsp. - Parsley, fresh, minced

Preparation:

Chill for one hour, stiffening the sauce like topping. Spread over a pre-baked pizza crust, then add pre-cooked or cold toppings for a chilled appetizer pizza.


Smokey Barbeque Pizza Sauce Recipe

Easy and quick. Prepare this sauce, whipping these ingredients to a smooth, medium thick
consistency. Great as a topping sauce for barbeque pizza recipes.


Ingredients:

1 (15 oz.) can - Tomato sauce
1/4 cup - Apple cider vinegar
2 tbsp. - Extra-virgin olive oil
1 (7 to 10 oz.) pkg. - Lipton Recipe Secrets Onion Soup Mix
1/4 cup - Light molasses
1 tsp. - Dry mustard
1 tsp. - Wright's Concentrated Hickory Seasoning Liquid Smoke


Preparation:

Combine all ingredients in a sauce pan, bring to a boil then simmer for 10 minutes stirring constantly. Let cool and store in the refrigerator, or use immediately on cooked ribs, chicken or seafood. Great for dipping , as well.

Quick, No-Cook Pizza Sauce Recipe

This tart, slightly sweet pizza sauce is quick and easy to prepare and requires no cooking time.
To prepare this sauce, combine all of the ingredients below in a large mixing bowl and whip
to a smooth, medium thick consistency.


Ingredients:

1 (29 oz.) can - Contadina Roma Style Tomato Sauce, (or other medium consistency sauce)
2/3 cup - Water
1 tbsp. - Garlic powder
1 tbsp. - Whole oregano, fresh chopped or dried flakes
1 tbsp. - Sweet basil, fresh chopped or dried flakes
2 tbsp. - Sugar
11/2 tsp. - Salt
1/2 tsp. - Black pepper, ground


Preparation:


Store in tightly covered container in the refrigerator for at least 1 hour. (The longer this sauce matures in the refrigerator, the better.) Set out to return to room temperature before using.

Make 4 cups, enough for 4 to 5 large (12" diameter) pizzas. Depending on the style and size of pizza you make, experiment with using between 2/3 cup and 1 cup of sauce per pizza.

Bacardi BBQ Pizza Sauce Recipe

Plenty of time to find other things to do with the remaining contents of the bottle after you have made this fine sauce.

Ingredients:

1cup - Butter or margarine
1 1/2 cups - BACARDI White, Gold or "1873" rum
1 1/2 cups - Ketchup
1 cup - Orange juice
2/3 cup - Honey
1/2 cup - Fresh lemon juice
2 tbsp. - Garlic, minced
1 tsp. - Salt
1/2 tsp. - Black pepper
1/4 tsp. - Cayenne pepper


Preparation:

In saucepan, over medium-high heat, melt butter. Stir in BACARDI rum, ketchup, orange juice, honey, lemon juice, garlic and seasonings. Cook, stirring occasionally, about 40 minutes or until thickened. (Plenty of time to find other things to do with the remaining contents of the bottle). Yield: about 2 cups.

Guacamole Pizza Sauce Recipe

The avocado's crowning glory.

Ingredients:

2 - Avocados, ripe
1 - Small onion, finely chopped
1 - Garlic clove, minced, (use garlic press for stronger flavor)
1 - Tomato, fresh, large dice
1 - Lime, juiced
1/3 cup - Chopped fresh cilantro
Salt
Black pepper
1 - Radish

Preparation:


Peel and mash avocados in a medium serving bowl. Stir in onion, garlic, tomato, lime juice, cilantro, salt and pepper.

Season with remaining lime juice and salt and pepper to taste. Cover with plastic wrap and chill for half an hour to blend flavors.

Spread over a pre-baked, cooled pizza shell. Garnish with sprigs of cilantro, and diced radishes, red onions and black olives. Cut into "finger" sized servings as a chilled appetizer.

Roberto's Mama-Mia Pizza Sauce Recipe

No wonder they call it "Mama-Mia!"

Ingredients:

1 can (12 oz.) - Tomato paste
11/2 cups  - Water
1 tsp. - Ground oregano
1/2 tsp. - Basil
1/4 tsp. - Salt
1/4 tsp. - Black pepper
1/4 tsp. - Sugar
1/8 tsp. - Garlic powder
1/8 tsp. - Onion powder
1/8 tsp. -

White Sauce Recipe for Pizza

This rich, creamy smooth white pizza sauce recipe is a delightful change of pace from tomato-based pizza sauces. Try this white pizza sauce with you next shrimp, chicken or vegetable pizza.

Ingredients:

1/3 cup - Flour
3/4 tsp. - Salt
1/8 tsp. - Black pepper
1/8 tsp. - Paprika
1/8 tsp. - Onion powder
2 cups - Milk
1 tbsp. - Butter, sweet, lightly salted


Preparation:

In a sauce pan, melt the butter over low heat.

Slowly add the flour, whisk until the butter and flour are combined. Continue to whisk, cooking the flour for 3 to 4 minutes, being careful not to burn the mixture.

Raise heat to medium, slowly adding a little milk at a time and thoroughly whisk mixture until creamy. When mixture is bubbly, add the remaining seasonings and combine.

Cook the sauce another 2 to three minutes at the boil, constantly stirring until thickened.

Cool the white sauce to room temperature before saucing your pizza.
