The Pizza-Lover's Easy-To-Use Guide for Successful Pizza-Making at Home

AIOLI LITE (Lower-Fat) RECIPE

There's no mistaking that this version tastes different from original aioli. Note that the consistency of this aioli is slightly thinner than a traditional version.

Ingredients:

1 clove - Fresh garlic, smashed to a paste with a mortar and pestle or finely minced
7 oz. - Soft tofu, drained well
2 tbsp. - Hellmann's Light Mayonnaise or other reduced-fat Mayonnaise
1 tbsp. - Dijon mustard
1 tbsp. - Fresh lemon juice
2 tbsp. - Extra-virgin olive oil

Preparation:

Combine all ingredients in food processor. Process the mixture until smooth. Season with salt and pepper.

Presentation: Serve immediately, or store in refrigerator, no longer than 5 days. Makes about 1 1/2 cups.

Approximate nutritional analysis per 1-tablespoon serving: calories, 30; fat, 3 grams; calories from fat, 84 percent; carbohydrates, trace; protein, 1 gram; fiber, trace; cholesterol, trace; sodium, 38 milligrams.
